I agree that it's a bit prescriptive and would probably backfire, but I do also think it's reasonable to ask people not to microwave their fish lunch in the communal kitchen.  (It's amazing how many people do this without thinking, and don't seem to notice that it permeates throughout the whole building.)  

It is possible to make it easy for people who want to try plant-based stuff by always having plant milks in the kitchen alongside the dairy milk, having vegan biscuits in the general supply (not just a tiny packet marked FOR VEGANS ONLY) for after MfW, and so on.  Having open cartons of eg oat, pea, or soya milk in the fridge means that people can try it for themselves without having to commit to a full litre!
